How do I read temperature with an Arduino or ESP32?
Connect the thermistor in a voltage divider with a fixed 10 kΩ resistor and feed the midpoint into an analog pin. Then convert the measured resistance to temperature using the B-parameter equation or a lookup table. Make sure the divider voltage matches the ADC range of your board, since ESP32 ADC pins are 3.3 V tolerant only.
