Is it suitable for a 5V line?
Yes. The 6.8 V stand-off voltage is above 5 V, so the diode stays inactive during normal 5 V operation and only conducts when a transient pushes the line above its clamping level.
How is it wired?
Connect it in parallel with the protected line and ground. The cathode (banded end) goes to the protected positive line and the anode goes to ground.
