What gate voltage is needed to fully turn on the IRF640?
The datasheet specifies on-resistance at a gate-source voltage of 10V. Gate threshold is roughly 2-4V, so a 5V microcontroller pin only partly enhances the device. For full switching, drive the gate at around 10V through a driver stage, or choose a logic-level MOSFET.
How should I wire it as a low-side switch?
Connect the source to ground, the load between the positive supply and the drain, and the gate to the control signal through a series resistor of around 100 to 220 ohms. Add a pull-down resistor on the gate so the MOSFET stays off while the controller starts up.
